Many materials created in nature contain gradients. Gradients of pores, gradients of proteins, gradients of size. These gradients typically allow for functional differences from one side of a material to another. My examples so far include:

Gradient of Bamboo
Gradient of Blue Mussel mfp proteins

Any more examples to show?

I have recently heard of use of gradient in Drosophila Melanogaster segmentation during a Development Biology course.

It is really interesting to discover how a whole functional organism can self-organize its morphology with only a few chemical and microscopic interaction forces.
